How We Clean

We completely clean the entire kitchen exhaust system, not just the areas you can easily see! You can be confident of a thorough job because we take pictures of the complete system before, during and after cleaning.

A crew member preps the kitchen:

  • We move any cooking equipment that is on wheels and can be disconnected away from the area under the hood.
  • We cover any cooking equipment not being moved with plastic and burn boards.
  • We also cover fryers or other oil holding devices with burn boards and wrap them separately in thick plastic to keep water and contamination out.
  • We drop plastic from the ceiling over prep and serving lines to protect them from contamination.
  • We funnel the hood with plastic when applicable, directing the wastewater generated into lined garbage cans for proper disposal.
  • We remove all filters, drip cups and other removable hood components.
  • We remove access panels on ceiling ductwork.
  • Any access doors are opened and scraped to bare metal, then closed for degreasing. If there are no access panels, preventing a complete cleaning, we will note this as inaccessible and recommend that you install these panels.
  • We scrape any large build-up in the troughs, plenums and ducts from below before beginning the degreasing process.

The main technician’s job during prep:

  • Check that the kitchen exhaust system is properly working, and note any problems for you.
  • Shut down and lock out power to the exhaust fans at the breaker box.
  • Check fans for possible problems, including bad belts, bearings, dirty motors or failing components.
  • Check that all grease cups on the fan are properly working and not missing.
  • Inspect all areas of the duct system for failing areas and note them.

The cleaning process:

  • Both the technician and the ground crew keep in contact during the process for safety purposes.
  • The technician starts at the fan and fully cleans the blades, bowl, top, bottom, sides and cup.
  • The crew cleans the ductwork from the top of the roof down as far as they can reach.
  • If the duct is long, the crew sends down a spinner that sprays water on all sides of the duct all the way down.
  • When the crew is finished with the upper portion, they head to the lower portion and clean any access panels and duct not accessible from the roof.
  • The rest of the systems below are cleaned, including troughs, openings, hood and more.

When the technician is satisfied that the cleaning is done, the ground crew takes over the final cleaning steps.

  • The crew dries all stainless on the hood and removes any water in the system.
  • When the hood is dry, the entire hood is polished to a beautiful shine using stainless polish.
  • The crew reinstalls the filters, replaces all equipment and re-lights the pilots.
  • The crew removes the plastic and cleans the area, including wiping down and mopping the floor. The kitchen area will be left cleaner than we found it!
  • The technician restores the power and checks for proper exhaust function.
  • The crew fills out a service report and attaches a sticker of completion with the service date and your next recommended cleaning service date.
